FAVOURITE RECIPES:
REGIONAL AND SEASONAL HIGHLIGHTS
Markgräfler wild garlic spaetzle
Ingredients (2 servings):
300 g flour (type 405)
4 eggs
100 g fresh wild garlic
nutmeg
Salt to taste
Optional: roasted onions
or bacon
Preparation 1:
Wash and roughly chop the wild garlic. Finely puree the wild garlic.
Knead the flour, salt, eggs and wild garlic into a dough.
Pour the dough into boiling salted water until the spaetzle rise to the surface. Skim off the spaetzle, leave to cool and drain.
Fry the spaetzle in butter until golden brown. Season with salt and nutmeg.
Preparation 2:
Optionally, the spaetzle can also be garnished with roasted onions or diced bacon.
We recommend serving with a glass of Pinot Gris.
